While living in Colorado we have really learned no to get too used to the weather. While we definitely have all four fun seasons, the square state of CO is rather fickle as to which one it wants when. We have an average winter temperature of 45 degrees but never lack for that beautiful white stuff, especially in spring, when March is the snowiest month in this state. An example of our indecisive state: we had snow, six inches worth, on May 11th, followed by two days of sunshine and 70s. So when we left for Michigan last week we we're sure what we would return to, the start of summer or the end of spring (very daunting at times). Well I can say (with very little confidence) that summer is here (and not just because I've stopped going to classes). With the wonderful weather it meant only one thing: grilling. Not that I need an excuse to grill (We've often been seeing lighting up in February) but the beginning of summer is surely an encouragement.
The Menu for this evening:
Appetizer:
New Pickles
Main Entree:
BBQ Pork Spare Ribs
Fire Grilled Corn on the Cob
Garlic, Parmesan Grilled Asparagus
Dessert:
Coconut Ice Cream with Grilled Bananas with a Brandy Honey glaze
I love summer!
